Sarah established Consulting Dietitians in 2004 - a service leading the way in dietetic advice in Auckland, New Zealand and which today has a team of six qualified dietitians providing professional advice to hospitals, corporates, community facilities and individuals.

A respected presenter at dietetic and nutrition conferences and GP workshops, Sarah is a former researcher and polytechnic lecturer. Her early career included working at an eating disorders clinic as well as recipe development and food writing for the Flour Advisory Bureau and Living Magazine in London. Later Sarah worked at Christchurch Hospital before moving to Auckland where she ran two microwave cooking schools in the 1980s, wrote food columns for More magazine and the Suburban Newspapers group, and published her popular “Sarah Ley’s Microwave Cookery”.

During the 1990s Sarah worked as a dietitian for Waitemata Health and completed a postgraduate diploma in Community Nutrition and a Masters of Science degree at Massey University. She has since contributed to research on body composition, weight management and heart health/diabetes at Auckland University’s Department of Community Health. As a dietitian she has worked in various capacities advising, teaching and researching for a range of corporate, academic, government and individual clients.

Sarah ran the Smart Choice restaurant programme for the National Heart Foundation from 1999 to 2002.
