Tuna Roll Ups

Serves 4
2 squares of flat Middle Eastern bread (wraps)
4 Tbsp peanut butter
1 tin (185g) tuna chunks
2 Tbsp ricotta cheese
1 carrot, peeled and coarsely grated
10 cm peeled cucumber, coarsely grated
4 large leaves of red lettuce, washed and well dried
Lay bread out on clean work surface and spread with peanut butter.
Drain tuna and mash with ricotta cheese.
Spread 2 Tbsp peanut butter evenly over one square of bread. If necessary warm the peanut butter to ensure it spreads easily.
Lay a lettuce leaf along the shorter end of the bread.
Spoon half the tuna cheese mixture on top of the lettuce leaf in a long roll shape, leaving edges free to roll up. Spoon half of the carrot and cucumber over the tuna mixture.
Cover with a second lettuce leaf.
Turn in both of the long sides of the bread and roll so that the filling is neatly wrapped up by the bread.
Wrap in greaseproof paper.
Make a second roll up in the same way with the remaining ingredients.
Refrigerate until ready to take out on the picnic. Cut each roll up into 2 for serving.
Tips:
- Peanut butter provides healthy monounsaturated fats and goes well with the other lower fat ingredients used in the recipe.
- Ensure that as much moisture as possible is removed from the grated cucumber to avoid the bread becoming soggy.
