Sweetcorn Patties
A tasty combination to make for a light vegetarian dinner meal from fairly common foods in the pantry. I serve these with a salad in which I have added some chopped nuts.(Serves 3)
410g creamed sweetcorn
1 egg, beaten lightly
1 tsp garlic
10 black olives, roughly chopped
2 tsp soy sauce
2/3 cup plain flour
1/2 tsp baking powder
Combine first four ingredients in a bowl. Mix together flour and baking
powder until well combined (if you are very fussy, sift together for
best results) before
mixing into other ingredients.
Heat a non-stick frying pan, spray with oil and put in about 3 large
spoonfuls to cook on first side.
When browned flip over and cook other side.
Keep warm whilst cooking remaining patties. Makes 6 large.
Serve with tossed salad.
