Stuffed Capsicums
Here is a slightly different way to include beans in your meals to increase
your soluble fibre intake.
(2 servings)
2 large capsicums or bell peppers
spray oil
½ onion, finely chopped
1 tsp crushed garlic
300g lamb mince
1 small tin (220g) baked beans
1 Tbsp Worcester Sauce
1 tsp curry powder
salt & pepper
Preheat oven to 180dec C middle shelf
Spray saucepan with oil. Glaze onion and garlic until soft.
Add mince and cook approximately 10 minutes, stirring frequently.
Add remaining ingredients and stir together.
Prepare capsicums by removing stem end and seeds.
Stuff capsicums with mince mixture and replace stem.
Place in ovenproof dish.
Bake 30 minutes.
Serve with rice and salad
