Sardine Topped Potatoes
An extremely quick nutritious snack for lunch or tea. I sometimes make
it into a dinner meal also.
(Serves 2)
2 medium potatoes, scrubbed
1 can (106g) sardines in lemon sauce
salad ingredients such as tomatoes, lettuce, capsicum, cucumber
Prick potatoes and cook in microwave for 4-5 minutes depending on power
output. Cut in half lengthwise and place on grill rack.
Preheat grill on high.
Drain sardines, reserving liquor for salad, and mash fish lightly with
a fork. Spread over cut surface of potatoes and grill briefly until sardines
are heated through.
Toss prepared salad with lemon sauce from sardines.
