Rice Salad
This great combination of carbs and protein makes a sustaining salad.
Make sure you always use good quality nuts as rancid nuts are very unhealthy
to eat.
(3 serves)
1 ½ cups cooked rice
1 can (310g) salmon
1 green pepper, diced
1 tomato, diced or 6 cherry tomatoes, halved
12 walnut halves, coarsely chopped
2 sundried tomatoes, finely chopped
2 Tbsp good olive oil
1 Tbsp balsamic vinegar
salt and pepper to taste
Place rice in bowl.
Flake salmon with a fork and add with liquor from can.
Add pepper, tomato, walnuts and sundried tomatoes.
Gently toss prepared salad with oil, vinegar and seasonings.
