Jellied Fruit Cups

Adding the lemon juice to the cold mixture retains as much vitamin C
as possible. The red berries have lots of anthocyanins - antioxidants
that are very good for everyone's health, and also lots of fibre in the
berry seeds. If children want to eat this dessert at home, suggest they
have some plain unsweetened yoghurt or low fat icecream or custard to
go with it.
( 4 servings)
¾ cup apple and blackcurrant juice
2 Tbsp sugar
1 sachet (10g) gelatine
juice of 1 lemon
1 cup frozen mixed berries
6 large strawberries, hulled and halved
1 banana, peeled and sliced
Heat together apple and blackcurrant juice and sugar in a small saucepan
until piping hot or in a microwave jug for 2 minutes on high. Stir in
gelatine until completely dissolved.
Add remaining ingredients, stir until thoroughly combined then spoon into
4 individual plastic containers to set.
Leave to set in refrigerator for approximately 2 hours or overnight if
preferred.
