Almond Bake

This recipe is very tasty and satisfying with plenty of fibre supplied by the dried fruit and brown rice. The fats are the healthy variety (monounsaturated and polyunsaturated) from vegetables rather than animals.
(Serves 4)

¼ cup raisins
½ cup finely chopped dried apricots
2 cup cooked brown rice
1 cup (130g) unblanched almonds, ground
1 cup grated raw beetroot or carrot
¼ cup oil
1 tsp minced garlic
freshly ground black pepper
little salt

Preheat oven to 180deg C, middle shelf.
Soak raisins and apricots in cold water to cover for 30 minutes then drain.
Lightly oil a baking dish or casserole dish (1 litre capacity)
Mix all ingredients together and press into prepared dish.
Bake 30 minutes or until firm.
